Peppermint Cheesecake
This cake can be patriotic if garnished with fresh blueberries. It is also great for Christmas just garnished with additional whipped cream and crushed peppermint candy!
1 C chocolate wafer crumbs 3 T melted margarine 1 envelope unflavored gelatin 1/4 C cold water 2 containers (8 oz each) soft cream cheese 1/2 C sugar 1/2 C milk 1/4 C (or more) crushed peppermint candy 1 C whipping cream, whipped 2 milk chocolate candy bars, finely chopped Additional whipping cream, whipped Additional crushed peppermint candy or blueberries
To Make: 1. Combine chocolate wafer crumbs and melted margarine. Press onto bottom of 9 inch springform pan. Bake at 350 degrees for 10 minutes. 2. Soften gelatin in cold water. Stir over low heat until dissolved. 3. Combine cream cheese and sugar, mixing at medium speed with electric mixer until well blended. Gradually add gelatin mixture, milk, and 1/4 of peppermint candy, mixing until blended. 4. Chill until thickened but not set. 5. Fold in whipped cream and chocolate bars; pour over crust. 6. Chill until firm. 7. Put additional whipped cream on top with peppermint candy or blueberries for garnish.
