Blueberry Crepes are great for breakfast

Blueberry Crepes
1 C sour cream
1/3 C firmly packed brown sugar
1 C biscuit mix
1 egg
1 C milk
1 can of blueberry filling or fresh blueberries
1 tsp orange extract
cooking oil
To make:
1. Blend sour cream and sugar and set aside.
2. Combine biscuit mix, egg and milk. Mix until smooth.
3. Heat oiled 6 inch skillet.
4. Fry 2 T biscuit mixture at a time until light brown; turn and brown other side.
5. Fill each crepe with the sour cream mixture.
6. Roll up and place in a baking dish, seam side down.
7. Pour blueberry filling on the top of crepes.
8. Bake at 350 degrees for 5 minutes.
9. Pour some orange extract over the crepes; ignite to serve. (Be careful.
