My youngest son loves this one!
Creamed Chicken and Biscuits (very quick!)
4 C boiled and shredded chicken 1 (10 and 3/4 oz) can of cream of chicken soup 1 C sour cream 1/2 C milk 1 pkg frozen peas and carrots 1 C (or more!) mild cheddar cheese (divided) 6-9 frozen biscuits, thawed
1. Preheat oven to 350 degrees. Butter the bottom and sides of an 11 x 7 in. baking dish.
2. Combine cooked, shredded chicken, soup, sour cream, milk, frozen peas and carrots, salt & pepper in a large bowl and mix well. Spoon this mixture into the prepared baking dish. Bake for 15 minutes. Remove from oven.
3. Sprinkle baked layer with 3/4 of cheddar cheese. Arrange the thawed biscuits in a single layer over the top of the chicken mixture. Sprinkle remaining cheese on top of biscuits.
4. Bake until biscuits are golden brown and sauce is bubbly. (about 20-25 minutes)
