Here is a recipe for my meatloaf. My family enjoys it year round. It is great with some mashed potatoes, white gravy and corn. If you are feeling ambitious, it is also great with apple crisp or apple pie!
My Meatloaf
2 lbs. ground beef 2 eggs Tempo (or other) meatloaf seasoning packet (or make your own seasoning) 1 and 1/2 C bread crumbs 1/4 C milk 1/4 C ketchup 1 small onion (diced) 1/3 of a large green pepper (diced) dab of barbecue sauce
To Make: 1 Preheat oven to 380 degrees. 2. Place some ketchup (thin) in bottom of a 11 x 7 rectangular cake pan. 3. Use a large wooden spoon and a large bowl to mix ground beef, eggs and seasonings. (You can also use a large ziplock bag!) 4. Add (half of) bread crumbs, milk, and ketchup to meat mixture and mix well. 5. Add remaining bread crumbs, onion and green pepper and mix thoroughly. 6. Place meatloaf in a large, rectangular cake pan (11 x 7). Cooks more quickly when you make it into two smaller loaves and place them side by side in the pan with a space between them. 7. Top with some ketchup and a dab of barbecue sauce and lots of black pepper. Cover with foil. 8. Bake at 380 degrees for about 1 hour or so. Remove foil. (The two smaller loaves will be about 1 hour. Longer if you make one big loaf. Cut the loaves in half after an hour to check for doneness in center of loaf. 9. Bake a little more without foil to finish baking and to brown slightly.

Some ideas I have used for seasonings: salt and black pepper, garlic powder, dill seed, basil, oregano and paprika.
If you don't have bread crumbs, make your own. I like to purchase them though, because they are the right size, and it is so much easier!
Try the ziplock bag mixing method, if you don't like to get your hands dirty. It can be quicker that using a wooden spoon and easier to mix too.
Remember, two smaller loaves cook more quickly than one large loaf. I have made the "meatloaf" into meatballs too, and baked them in a muffin tin. I like the two loaf method best.

Nice, thanks! I never tried that, but maybe one day... Do you have any gourmet pizza recipes like those from foxspizzanashville.com/menu/gourmet-pizza/ for example? I am such a fan of their pizza, and I would like to try to cook it now. Please let me know if you have a good and trusted recipe here, thanks!
